I am cooking a goose on the 26th, and know I have to use apples, but what else?

Traditionally we in Hamburg, stuff the goose with apples, a special one
"Belle de Boskoop". It is sweet sour. http://www.orangepippin.com/apples/belle-de-boskoop.aspx

and raisins. Don´t forget a spoonful of mugwort. It is good for the digestion of the fat.

Why don’t you just go to GOOGLE and enter "GOOSE RECIPES"? any time I am looking for a recipe that is EXACTLY how I get it.
